Carrot Salad


This one is so good and so GAP/SCD perfect.  Once you are able to consume raw carrots this salad is quick and easy.

The recipe looks something like this…

1 1/2  grated carrot per person

kefir or coconut milk or a combination of homemade mayo with yogurt enough to moisten the salad.

A handful of raisins

A handful of grated coconut

A couple of tablespoons of honey if desired.

Mix it all together and let sit a couple of hours for the flavors to meld together.  This is a salad that is good to keep on hand for those carrot lovers…it makes a great snack and a terrific side dish for a meal.

I have only given a basic recipe.  Carrots Salad can be made with all kinds of variances.  Some people use only orange juice and honey…My mother has put peanut butter in it…etc. Also things like walnuts can be added…or for a different flavor hot or bell peppers, or cucumbers…etc.     Or you could dissolve gelatin in heated water and add it to orange juice and make a cold molded salad.

This post is all about an idea.  If you have never made a carrot salad give it a try.  Dust off the food process and see how quickly you can put this one together and then see how quickly it will get eaten.

Mango Avocado Salsa

This is a fabulous salsa idea.  It is so quick and easy to make and goes with a wide variety of other foods.  You combine diced up of ripe mango, diced up ripe avocado with some diced sweet onion (red is good for color), toss in some hot or bell pepper, drizzle it all with lime juice and sprinkle it with salt and pepper 

There are all kinds of ways to vary this idea like adding black olives or raisins.  I didn’t have any cilantro today but it would have been good added to it.  Scallions could be used in place of sweet onions…I am sure that in your kitchen you can come with your ways to vary this simple fruit salsa.

Salmon Salad

I planned to do several things today that required the use of my kitchen so for lunch I wanted something fast and simple to put together.  Since it has been several days since we have had fish, I settled on a can of Salmon. 

I made some wonderful mayo last night out of half coconut oil and half walnut oil.  So for my salad, I drained the liquid off of the salmon (reserved to be used later on) added in enough mayo to moisten the fish, a couple of scallions (but any sweet onion chopped up will do nicely), and that was it.   Quick, easy and ready.  I intended to add celery but I forgot.

I served this with some GAPS/SCD bread and some carrots sticks.  On the side, I offered some homemade hot mustard which accompanied it all very well.

GAPS/SCD does not have to be hard and complicated.  Even if you include the time it took to make the mayonaise last night and the mustard several days ago the whole time frame for this meal was less than 20 minutes.
